Ingredients

  • 1 can artichoke hearts
  • 1 can artichoke bottoms
  • 1/2 cup sour cream
  • 1/2 cup cream cheese
  • 3 tablespoons mayonnaise
  • 2 cups shredded cheese (cheddar / colby / jack / mozzarella all work well)
  • 2 cups grated parmesan cheese
  • 1 teaspoon garlic powder
  • 2 teaspoon onion powder
  • pinch of salt
  • 1/2 teaspoon finely ground pepper
  • 1 can sliced water chestnuts
  • 1 jar roasted red bell peppers

How to make Artichoke Dip


this dish originated as a dip for a new years eve party featuring one dip from each attendee. its great, has lots of cheesey goodness and has veggies!

  1. add the sour cream and cream cheese and mayonnaise to mixing bowl and mix together into smooth paste
  2. drain and rinse the cans of the artichoke hearts / bottoms as well as the water chestnuts and roasted peppers
  3. roughly dice the artichoke parts, water chestnuts and roasted peppers
  4. add vegetables to bowl and incorporate into mixture
  5. add garlic powder and onion powder
  6. mix in cheeses
  7. salt / pepper to taste
  8. bake at 350F for 45 mins or until bubbly
