Ingredients

  • one large egg white
  • 1/2 cup of sugar
  • 1 tsp of cinnamon
  • one pinch of salt
  • 1/4 of rough chopped hazelnuts

How to make Meringue


  • preheat your oven to 300 degrees
  • line parchment paper on a flat pan
  • whip your egg white with hand mixer until it is stiff
  • add the sugar, salt, and cinnamon
  • whip the mixture again until it becomes stiff
  • incorporate gently the chopped hazelnuts
  • drop one teaspoon of batter at a time, one inch apart
  • bake for 30 to 45 minutes, depending on the oven
  • it should look crisp and become golden on the outside
  • remove from the oven
  • cool at room temperature
  • put the meringue in an air tight container
  • you can keep the meringues for up to 4 days in low humidity weather
  • serve with a cup of tea
