Ingredients

MARINADE - olive oil - red wine/vinegar - chopped bell peppers (red and yellow best) - fresh crushed garlic - chopped red onion - chicken soup powder/stock - crushed basil - soy sauce

How to make Michael's Pork Tenderloin


(This recipe has been used by my son since he was about ten years old. He prepares and marinates the dish over night. Great with rice and his famous spinach feta scones)

  1. Throw all marinade ingredients together until you have a runny paste (no I have no measures, just go for it, that's what cookings is all about)
  2. Add pork medalions and toss all about ensuring all is coated.
  3. Marinate for atleast one hour.
  4. Bake in shallow oven proof dish covered at 375 for 30-45min or until tender. Remove cover and allow veggies and meat to brown for last 10-15min.
