Ingredients

  • 2 cups of penne pasta
  • 1/2 a tomato diced
  • 2 pieces shredded ham
  • 1 mushroom chopped
  • 1/2 an avocado diced
  • 4 cloves garlic finely chopped
  • 1 table spoon crumbled feta cheese
  • 3 lettuce leaves chopped
  • olive oil
  • salt and pepper



How to make Steamed Pasta Salad


I realise that I seem to be using similar ingredients to my breakfast recipe. It's part of my trying to incorporate more fresh vegetables into my diet lifestyle now that it's approaching winter and I ALWAYS get sick during winter. urgh. This recipe is super simple and yummy!

  1. Prepare all your vegetables as in the ingredients list.
  2. Boil pasta until al dente then por the water out of the pot, leaving just enough to lightly cover the bottom of the pot. (a very very thin layer of water)
  3. Add in olive oil, garlic, salt and pepper, crumbled feta and mushrooms then stir until mixed. (the reason why I left the water then did this is because I didn't want it to be too dry and I didn't add a lot of olive oil, maybe just a teaspoon and the moisture helps steam the whole mixture releasing the flavours of garlic into the pasta and softening the mushrooms)
  4. After it has stopped releasing as much steam and has cooled down a little add in the shredded ham, tomatoes and avocados and mix through.
  5. Put into a bowl or on a plate and add in the lettuce leaves, if you added the lettuce leaves into the pot, they will go soft, I like mine crispy.
  6. EAT!
This recipe serves 2 as a main meal or 3-4 as a side dish. I think this would go great with a steak, some lamb or chicken. :)

    Aww!! Don't go on a diet! I'm not on a diet, i'm just trying not to fall sick LOL! Hence more fruits and veges! :)

    Meh I need to go on the stupid diet! I gained like 5 pounds over the hols. Anywho, yay for more healthy food!

    5 pounds is not a lot hun! you don't need to lose any weight at all imo
