Ingredients

  • 200g french beans (or baby fine beans), top and tail removed, and then finely chopped
  • 3 eggs, beaten, and mixed with 3/4 tbsp light soy sauce
  • 1 tbsp chopped garlic
  • 1 tbsp olive oil
  • coriander, for garnishing

How to make French Beans with Egg


  1. Heat oil in wok and stir fry garlic till light brown.
  2. Add chopped beans and stir fry over moderate high heat for 5 minutes.
  3. Pour the egg mixture slowly and stir thoroughly till the eggs are well cooked and no longer wet. Served with rice.
