Ingredients
- cod fish steak
- 1/2 plum tomato, diced
- 1/4 white onion, sliced
- cilantro, chopped
- miso paste
- pepper
- 2 slivers butter
- steamed yu choy
- vegetable oil
- aluminum foil
How to make Baked Miso Cod w Plum Tomato
This is a great, after-work dinner (provided you have all this stuff in your fridge), when you don't want to think too much or stay in the kitchen for too long. It's quick, easy and hits the spot.
pat cod fish steak with paper towel
spread approximately 1/2 tsp. miso paste on one side of cod (less is more because miso paste is quite salty).
pat chopped cilantro on top of miso paste, then pepper fish
place fish, miso-side down in hot oil for approximately 3 minutes.
when miso-side of fish is browned, place on a large sheet of aluminum foil.
top fish with diced plum tomato, onion and butter.
seal foil packet and place on a baking sheet. bake for approximately 15-20 minutes at 375 degrees farenheit.
remove from foil and serve over hot rice with steamed yu choy.
