Peanut Butter Chile Chicken Recipe

Ingredients
- 2 large chicken breasts, thinly sliced
- minced garlic
- minced ginger
- chopped cilantro
- chiffonade of basil
- scallions/green onion
- 1/2 chopped red bell pepper
- soy sauce
- peanut butter
- corn starch
- sugar
- freshly ground black pepper
- chili paste
- oil
How to make Peanut Butter Chile Chicken
Velveting the chicken: to the chicken, add soy sauce, corn starch, oil and black pepper. Stir to coat chicken.
Heat oil and fry garlic until fragrant. Add chicken and ginger (do this in batches if your pan is too small to allow all the chicken pieces to touch the bottom of the pan. you want the pieces to brown equally) and brown for 3-4 minutes. Remove from pan and set aside.
To pan, add half of the scallions, basil and cilantro. Allow to wilt, then add red bell peppers. Return chicken to pan. Add peanut butter and chili paste dissolved in hot water. Let simmer until sauce thickens.
Stir in remaining scallion, cilantro and basil. Serve over steaming rice.

worldpeas sayswell i'm glad you all liked it! wasn't it really quick to cook too? good times. those nuts on top are cashews, too-- i didn't have peanuts on hand. but a good tip (and i should have included it) is to use chunky peanut butter, so the peanuts are right in there to begin with :)
