How to make Salt and Pepper Shrimp
Yes, shrimp... with the heads still attached. Don't get freaked out-- you don't actually eat the heads, but the fat does give this dish a beautiful bright orange color. Quick, easy and great with beer. Enjoy!
1. Wash shrimp and with kitchen shears, cut off the long antennae and sharp barb of the head.
2. In a large pan, heat oil and throw in the garlic. when fragrant, add shrimp and give a quick saute. Season with salt and pepper and pour in the vinegar. Cover and allow to bubble.
3. In about 10 minutes, uncover the pot and allow liquid to evaporate, tossing shrimp. Throw in the scallions at this point. Shrimp are cooked through when they're all orange (no grey in there at all).
4. Cool and serve.

my uncles eat the heads...I'd rather snap them off tho!
