Summer Garlic Squash-ta with Grape Tomatoes

Ingredients

- 3 medium zucchinis and 1 large yellow squash, shredded with a mandoline into angel-hair pasta consistency
- 4 cloves garlic, minced
- handful of grape tomatoes
- olive oil
- salt and pepper
- parmesan cheese

How to make Summer Garlic Squash-ta with Grape Tomatoes


1. In a non-stick, oven-safe dish or pan, sprinkle about a tablespoon of olive oil and some salt onto the grape tomatoes. Place in a 375 degree oven for about 20 minutes or until tomatoes are super tender or have burst. Set aside and keep warm.

2. In a large pan, heat olive oil and fry garlic until fragrant. Throw in your shredded squash-ta and saute until tender, but not mushy (you want the vegetables to have a slight crunch). Season with salt and pepper.

3. When vegetables are cooked, remove from pan and drain of excess liquid. Stir in tomatoes and a generous amount of parmesan cheese.

4. Serves 3-4.
