Vegetarian Japchae (Korean Sweet Potato Noodles) Recipe

Ingredients
1/2 package of korean sweet potato noodles (dang myeon)
1/2 package smoked tofu, sliced thinly
1/2 white onion, sliced
Handful of chinese broccoli or spinach, washed and cut in half
1 carrot, julienned
2 stalks green onion; one stalk chopped, other stalk sliced lengthwise into bite-sized pieces
dried shitake mushrooms, sliced and soaked in hot water
handful of black fungus (auricularia auricula, black kikurage, wood ear mushrooms... you can wikipedia it), soaked in hot water
3 cloves garlic, minced
sugar
soy sauce
sesame oil
How to make Vegetarian Japchae (Korean Sweet Potato Noodles)
Japchae, a traditional Korean dish of sweet potato cellophane noodles mixed with vegetables usually includes beef. For non-beef eaters, here's my tofu version, which surprisingly came out pretty good. If you want to stay true to the beef version, you can follow this recipe, substituting tofu for any meat you'd like. Enjoy!

i LOVE japchae!!!!.... the vegetarian part is nice too but i need some sliced rib eye in there lol
