Onion Soup with Cheese Croutons Recipe

Ingredients
For Soup:
- 1 t butter
- 2 medium onion, thinly sliced, about 2 cups
- 1/8 t black pepper
- 1/4 cup dry red wine
- 1 + 1/2 cups less-sodium chicken broth
- 1 + 1/2 cups water
- 1/8 t dried thyme or parsley
- salt to taste
Cheese Croutons:
- store bought croutons
- grated Mozzarella cheese
How to make Onion Soup with Cheese Croutons
I love my friend, Winnie's onion soup very much, even there is too much red wine for me :)
so i change her recipe a little bit, and add some cheese croutons on top, let it look more fancy~
Melt butter in a medium saucepan, add onion and pepper to pan. Cook 15 minutes or until golden brown, stirring occasionally. Stir in wine, cook 2 minutes or until wine almost evaporates.
Add broth, water and thyme, bring to a boil. Cook until reduced to 2+1/2 cups, about 15 minutes. Add salt to taste.
Preheat broiler. Place croutons on a baking sheet, sprinkle cheese on top, bake until cheese melts.
Pour soup into a serving plate, place 2 to 3 cheese croutons on top, serve immediately.
