Almond Banana Whole Wheat Muffin Recipe

Ingredients
- 1 cup whole wheat flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup lite soy milkĀ
- 1 egg
- 1/2 cup honey
- 1/2 tsp vanilla extract
- 2 ripe bananas
- about 2/3 cups raw almonds
- some love
How to make Almond Banana Whole Wheat Muffin
- Preheat oven to 350 degrees Fahrenheit.
- Combine the dry ingredients (flour through salt) in a bowl.
- In a separate bowl, slice the bananas and slightly mash it with a fork. (You still want it kinda chunky). Add to the mashed bananas, the wet ingredients (milk through vanilla extract)
- Combine dry ingredients into wet ingredients. Fold it in lightly. DO NOT over mix!
- Chop the almonds and lightly fold it in.
- Put it in a muffin tin and bake for 30-40 mins.
- Give it some love.
**Makes about 8-9 small muffins.

I usually use recipies from the Web with extra caution and only if my cook-books don't have tha exactly what's needed.BUT THIS ONE came out complete,well-measured and absolutely satisfying, yet (!)vurtually fat-free beauty of a muffin...And whole-wheat flour?It almost hard to believe that something so healthy can taste that good...Thank you very much KamanKaman...

KamanKaman saysI'm so glad you liked it yupitree! I think people tend to think that certain foods need a certain amount of fats, sugar, butter or hwatnot in order for it to taste good, but I think sometimes it's not necessary. :D
