Booze Truffles Recipe

Ingredients
- 300 g of good dark chocolate (more than 70% cocoa)
- 250 ml of double cream
- The peal of an orange (clementine, lemon, lime or all of those [be careful with proportion])
- 50 g of butter
- 5 cloves
- One cinamon stick
- 50 ml of a good booze (wiskey, brandy, rum)
- One hand full of raisins
- One pinch of salt (it will make all the difference)
- Dark cocoa dust (for serving)
- Coconut flakes (for serving)
- Chope wallnuts, almond, nuts, peanuts, phistacio (for serving)
- And a lot of love
How to make Booze Truffles
Put the double cream with cloves, cinamon and the citrus peal to heat (be careful not to boil because you will ruin the truffles) it must be heated not boiled or, if is boiling let it a little bit to cool down (you must be able to melt the butter and the chocolate into the cream). Get out the cloves and the cinamon from the cream (you don't wish to smash a clove in your teeth ;)). After that add the butter and let it to melt (you can adjust the heat of the cream if it get colder). On a clean bol you put the smashed chocolate and add the hot (not boiled) cream on it. You mixed'em up until all ingredients are incorporated. Add one shot (50 ml) of booze and the chopped raisins. Do not forget to add one pinch of salt, it will make the whole difference, it will intensifying the chocolatiness of truffles. Then put the composition on the fridge for 2 or three hours (in this time you can enjoy another shot of that cool booze ;)).When the composition is ready you can bring to shape your truffles, you can use a spoon heated in a glass of hot water to form the truffles easier. You can get them thru the cocoa dust, coconut flakes, chopped nuts or what ever you like (use your imagination).Enjoy and let me now if you liked 'em (you can come with your own ideas I am waiting).You can serv 'em un a plate or a can/box (like I did ;))
