Ingredients
- Potatos
- Flour
- Chopped green onion
- Oil for frying
- Salt & Pepper (of course)
- Chili peppers
- Garlic
- Pretty much anything awesome you can think of. (I've seen these made with bacon)
How to make tudoubing
You may already know that I love latkes...and that I like to do strange things with them. This recipe is like the Chinese version of latkes, which I had to translate with babelfish from something called tu3dou4bing3.
There are different ways you could make these. You can grate the potatoes and make one big pancake, or steam them first and mash them. I prefer the latter.
- First, steam the potatoes until they are fork tender, then mash them in a bowl with some but not all of your green onion, salt and pepper.
- Mix some flour in the potato mix to hold it together.
- Lay out some plastic wrap on a cutting board, and heat a shallow pan with some oil.
- Roll some little balls out of your potato mix and flatten them on the plastic. Use a little more flour if they're too sticky. The flatter you make them the crunchier you can get them.
- Place each pancake in the oil and fry until golden on each side.
- Top with the rest of your green onion and whatever else you want. Chopped garlic and chilis would be awesome, but I didn't have either when I made this batch, unfortunately.
Be creative, I've seen these made with bits of chopped bacon in them. Of course that wouldn't be kosher, but I won't tell.
