Tri-Color Salad with Refreshing Citrus Dressing

Ingredients

1 Head Ridicco 

1 Head Endive

2-3 cup arugula leaves

1/2 red onion, very thinly sliced


Dressing:

2 tablespoons extra virgin olive oil

1/4 cup fresh lemon juice

1/2 teaspoon ground black pepper (or to taste)

1/2 teaspoon salt (or to taste)

How to make Tri-Color Salad with Refreshing Citrus Dressing


1) Trim and rinse head of riddico and endive.    Cut in half length-wise, thinly slice each half  and transfer to serving bowl. 


2) Rinse, dry, and tear arugula into bite size pieces.  Transfer to bowl.  


3) Top with red onion slices.  Cover bowl with damp towel and chill until ready to serve.


4) In a small bowl, whisk together all of the dressing ingredients until creamy.  Refrigerate the dressing in a glass jar until ready to serve.  Just before serving, pour dressing over the salad and toss gently to distribute well.
