Chickpea & mango salad

Ingredients
  • 1/2 cup of chickpea (dried and cooked or canned)
  • 4 pieces of dried tomatoes, sliced
  • 1/2 mango, peeled and cubed
  • 2 lettuce leaves, torn
  • couple of basil leaves
  • 1/3 of lemon, juice only
  • 1 tea spoon of oil from tomatoes
  • 1 tea spoon of honey
  • pinch of ground cumin
Instructions
  1. Mix top five ingredients in a bowl.
  2. Mix remaining dressing ingredients and pour over salad.
  3. Serve.
