Tofu with Shrimp and Ground Pork Recipe

Ingredients
- Block of hard tofu. You can use the softer ones or egg tofu.
- Minced pork - to your liking.
- Shrimp - to your liking
- Spring onions (1) - chopped
- Garlic - chopped - to your liking
- Dash of sea salt and white pepper
- Broth - may use water
- Soju - or cooking wine to marinate the pork
- Corn starch - thickening agent
How to make Tofu with Shrimp and Ground Pork
I borrowed the Egg tofu scallopini recipe from Melting Wok and made my own version of it.
Lucky for me, my wife cooked up her Odeng 오뎅 (fish cake) soup so I used that as base, minced pork and regular tofu instead of egg tofu.
- Cut the tofu into edible cubes and pat dray with paper towl
- Pan fry until golden brown on both sides then set aside
- Stir fry the shrimp in salt and pepper quickly and make sure not to over cook. Slight orange tint outside, raw inside.
- Stir fry the minced pork in salt and pepper until cooked and mix in the garlic at the end
- Add the shrimp and saute in broth
- Slowly stir in the corn starch mixture to thicken
- Mix with tofu and finish with spring onions
