Lemon Chicken with Rice Recipe

Ingredients
Chicken- 4 chicken breasts
- Salt
- Black pepper
- 1 cup rice
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Peas (optional)
- 1 tablespoon butter
- 2 tablespoons flour
- 1 cups chicken broth
- 1 cup milk or half-and-half
- 1/4 teaspoon nutmeg
- pinch cayenne pepper
- 1 tablespoon fresh lemon juice
- Salt (optional)
How to make Lemon Chicken with Rice
Chicken
Season the chicken with the salt and pepper. Saute over medium heat until cooked through (or, gently poach until cooked).
Rice
- Rinse rice under water.
- Combine with chicken broth and lemon juice in a medium pot.
- Bring to a boil, then reduce heat to lowest setting. Let simmer for about 20 minutes or until all the liquid is absorbed. Add water if needed.
Sauce
- Melt the butter in a saucepan over medium-low heat.
- Add the flour and whisk into the butter, breaking up any clumps.
- Add the chicken stock, whisking. Bring to a boil, then simmer about 10 minutes.
- Add the milk, nutmeg, cayenne, 2 tablespoons of the lemon juice, and salt to taste. Bring to a boil and simmer an additional 5 minutes.
