ingredient A:
200gm cooked rice-(prefer overnight rice)
130gm flour
35gn rice flour
1 tbsp tapioca flour
1/2 tsp baking powder
200 ml water

ingredient B:
100gm sweet potatoes-shredded
1 tbsp chopped shallot
1 tbsp chopped red chilly
20gm dried oyster-soaked and shredded.
salt and pepper

some ground nuts for garnish

How to make Hawker sweet potato oyster fritters

1. Soak rice for 20 mins.drain and keep aside
2. Combine the soaked  rice with ingredient A and mix well.
3. Add ingredient B and mix well, Leave for 20 mins.
4. Heat a wok with 3 cups oil and heat a ladle in the oil. Pour a spoonful of batter into the hot ladle and top with some peanuts. Lower the ladle in hot oil and deep fry till golden .
5. Using a folk remove the fritters from the ladle and let it cook in the oil . repeat the same with the rest of the batter.
6 . Serve hot with chilly sauce.
