150 gm flour
1/8 tsp salt
150gm butter
1 egg yolk
75 cc cold water

For filling:
3 egg yolks
1/2 tbsp cornflour
1 tbsp flour
35gm sugar
1 cup fresh milk
1 tbsp butter
1/2 tsp vanilla

1/4 cup water
20gm butter
25gm flour
1 egg

1/3 cup raspberry jam

icing sugar for dusting
apricot jam for glazing

How to make Old fashion French tart

1. Crumble butter in flour . Add yolk to water and add to flour, knead to soft dough. Chill for 1 hour covered with plastic.
2, Roll out and fold twice and roll again to 2mm thick and cut with a cutter to fit a tart tin.
3.  For mixture A:-Mix flour, cornflour and yolks in a pan using a wooden spoon.
4. Warm up milk with butter and add to flour mixture and stir under heat till well mix. Add vanilla.
5. For mixture B:- In another pan heat water and butter. Add flour and stir to form soft dough . remove heat, cool , Add egg and stir well to mix. Add a bit of milk or water to get a mayonnaise look.
6. Take half of the A mixture and combine with B. Mix well and put in piping bag. Pipe it into the tart case.
7. With the remaining pastry, cut few strip and lay it on cake, crisscross.
8. Bake in preheated oven at 180 C for 10 mins and the lower to 160 C for another 15 mins.
9. When its cool, make a small cut between the cake and pastry, Pipe the remaining mixture A into cake.
10. Brush the top with apricot jam and sieve icing over cake.
11. Brush 2 parts of the quarter with raspberry jam like show in the picture.
