Vegetarian Fettucini pasta with tomatoes

120gm fettucini pasta-cooked till soft
1/2 onions-chopped
1 tbsp chopped garlic
2 large tomatoes - blanch and peel-chopped
1/2 tsp dried oregano
1/2 tsp salt and pepper
1 cup chicken stock
2 dried mushroom- soak to soften in boiling water
1/2 cup chopped parsley
1 tbsp tomato ketchup
1 tsp sugar
3 tbsp olive oil

How to make Vegetarian Fettucini pasta with tomatoes

1. Drain the pasta. Heat 3 tbsp oil. Saute onion, garlic, the add tomatoes and let simmer. Add chopped mushrooms. leave to cook slowly for 1/2 hour and till the gravy almost dry.
2.Season with oregano, ketchup, salt and pepper. Lastly add parsley. Stir.
3 Add pasta and toss well , serve hot.

    I am! But unfortunately, your recipe calls for chicken stock. Not a vegetarian friendly item. However, I substituted it for veggie stock
