Ingredients
Grilled Pork- Pork chop or loin
- Red onion or shallots
- Garlic
- Grain mustard
- White wine
- Lemon/lime juice
- Avocado
- Garlic

- Taco seasoning
- Chilli powder
- Lemon/lime juice
How to make Grilled Pork and Guacamole sandwich
Finely chop garlic, onion and tomato. You can make enough for both the guacamole and pork marinade
To make guacamole
- Peel and spoon ripe avocado into a bowl and mash
- Mix in taco seasoning to taste
- If no taco seasoning, substitute with ground cumin, chilli powder, pepper flakes
- Mix in garlic, onion and tomato 'mince'
- Taste and adjust seasoning as needed
- Finish with lemon/lime juice to taste
- You can use either a pork chop or loin
- Marinate in mixture of white wine, lemon/lime juice, mustard, chilli powder and onion & garlic mince
- Sear the pork on a hot grill or in a hot saute pan, taking care not to burn the marinade
- If using a saute pan, you can make a simple sauce by adding the remaining marinade or extra white wine to the pan and scrape the browned drippings
To build the sandwich
- Warm 2 pitas in the microwave or in an oven toaster
- Spread guacomole generously
- Add sliced pork and drizzle gravy on top
- Round off with some simple salad green
