Spring Blackbean Salsa

  • 1 can of blackbeans, drained and rinsed
  • 1 can of white shoepeg corn, drained and rinsed
  • 2-3 small tomatoes diced
  • 1 large onion diced
  • 2 cups of chopped fresh cilantro
  • 2 limes
  • 1/2 teaspoon sea-salt
  • 1 bag of tortilla chips (or other for dipping)
Optional Ingredients:
  • 1/2 serrano pepper finely chopped
  • 1 avacado coarse chopped
  • 2 cloves of garlic finely chopped

How to make Spring Blackbean Salsa

Add all ingredients (except lime & chips) to bowl and mix.  Cut both limes and squeeze over mix.  Stir mix and refrigerate for 30 minutes.Serve with chips and enjoy!
