  • 1 C. corn meal
  • boiling water
  • 4 T. flour
  • 2 t. baking powder
  • 3/4 t. salt
  • 1 T. molasses
  • 1 egg
  • 1 C. milk

How to make Corn Meal Griddle Cakes

This recipe is one I tried from a 1934 edition of the Rumford Complete Cookbook. A nice breakfast recipe that I will definitely keep using.

  1. Scald the corn meal with just enough water to cover it. (It might be best to use a shallow bowl so the water can get to the bottom easily)
  2. Let stand 5 minutes, then add flour, salt and molasses.
  3. Thin to a batter with the beaten egg and milk.
  4. Add the baking powder last, beating it in well.
  5. Cook on a greased griddle over medium heat.
