Ingredients
Stuffing:
- 2 packages of lean ground beef
- 4 medium sized red peppers (yellow or orange are good too). look for peppers that are square and wide.
- 1/4 cup rice (white or brown)
- 1 red onion, chopped
- approx. 3 TBSP ketchup
- 1 tsp fresh oregano, chopped (i prefer fresh but you can use 1/2 tsp dried)
- fresh parsley to your taste
- salt & pepper to your taste
Sauce:
- 1 large can whole tomatoes with the juice
- 1 TBSP of ketchup
- 1 tsp oregano, chopped (you can use 1/2 tsp dried if you prefer)
How to make stuffed peppers
- Pre-heat oven to 350 degrees F.
- Cut the tops from the peppers. Remove seeds.
- In a large bowl, combine the beef with the onion, rice, ketchup, oregano, parsley, salt & pepper. Mix thoroughly.
- Spoon beef mixture into the peppers. Place the peppers open top up in a pan or baking dish lined with tinfoil.
- Make the sauce by mixing all of the ingredients together. Spoon over the peppers.
- Cover pan/dish with aluminum foil. See that it is on tightly.
- Put into oven and bake for 1.5 hours (for medium doneness -- if you use your thermometer to check it it should read 160 degrees F -- untii the center of the beef is no longer pink.
- Take out of oven and let stand for atleast five minutes before serving.
